Puri Bhaji Recipe
A classic breakfast dish that’s comforting and flavorful
Ingredients
For the Puri
- 2 cups Whole Wheat Flour
- 1/4 tsp salt
- 1/4 cup water or as needed
- 1 tsp oil
- Oil for deep frying
For the Bhaji (Potato Curry)
- 4 medium potatoes boiled and peeled
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 sprig curry leaves optional
- 2 green chilies slit
- 1 medium onion sliced
- 1/2 tsp turmeric powder
- 1 tsp ginger grated
- 1 medium tomato chopped
- 1/2 tsp garam masala optional
- Salt to taste
- 1 cup water
- Fresh coriander leaves chopped, for garnish
Instructions
Make the Puri
Make the Dough:
- In a mixing bowl, combine whole wheat flour, salt, and 1 tsp oil.
- Gradually add water and knead into a firm yet pliable dough. Let it rest for 15-20 minutes, covered with a damp cloth.
Roll the Puris:
- Divide the dough into small, equal-sized balls.
- Roll each ball into a small circle (about 4-5 inches in diameter) using a rolling pin. Avoid using too much flour for dusting; you can lightly grease the rolling surface if needed.
Fry the Puris:
- Heat oil in a deep pan or kadai until hot.
- Gently slide one puri into the oil. Press lightly with a slotted spoon to help it puff up.
- Fry until golden on both sides, then remove and drain on paper towels.
- Repeat for all puris.
Make the Bhaji: Prepare the Base
- Heat oil in a pan. Add mustard seeds and let them splutter.
- Add cumin seeds, curry leaves, and green chilies. Sauté for 1 minute.
Cook the Vegetables:
- Add sliced onions and sauté until golden.
- Stir in grated ginger, turmeric powder, and chopped tomatoes. Cook until the tomatoes soften.
Add Potatoes:
- Mash the boiled potatoes roughly (leave some chunks for texture).
- Add them to the pan, mix well, and season with salt and garam masala (if using).
Simmer the Curry:
- Add 1 cup of water to adjust the consistency of the bhaji. Simmer for 5-7 minutes, stirring occasionally.
Garnish:
- Turn off the heat and garnish with chopped coriander leaves.
Notes
Serving Suggestion
Serve hot puris with the warm bhaji on the side. You can also add pickles, yogurt, or chutney to the plate for extra flavor. Enjoy your classic Indian breakfast! 😊
