Ingredients

  • 2 cups whole wheat flour atta
  • 1/4 tsp salt
  • 1 tsp oil optional, for softer puris
  • 1/4 cup water or as needed
  • Oil for deep frying

Prepare the Dough

  • In a large mixing bowl combine the whole wheat flour and salt.
  • Add the oil optional and mix it into the flour using your fingers.
  • Gradually add water a little at a time, and knead the mixture into a firm, smooth dough.
  • Cover the dough with a damp cloth and let it rest for 10-15 minutes.

Roll the Puris

  • Divide the dough into small equal-sized balls (about the size of a lime).
  • Using a rolling pin roll each ball into a small circle, about 4-5 inches in diameter. Ensure they’re evenly thick to help them puff up during frying.
  • Avoid using excess flour for rolling; if needed lightly grease the rolling surface with a drop of oil.

Fry the Puris

  • Heat oil in a deep pan or kadai over medium-high heat. The oil should be hot but not smoking. To test, drop a small piece of dough into the oil—if it rises immediately with bubbles, the oil is ready.
  • Carefully slide one puri into the hot oil.
  • Lightly press it with a slotted spoon to help it puff up.
  • Flip and fry the other side until golden brown.
  • Remove and drain on paper towels.
  • Repeat with the remaining dough balls.
